I am married to a man who spent most of his childhood in Mexico City. He is fluent in Spanish and has a love for the culture and food here. I met him almost 15 years ago in Annapolis MD and we have been together since. He is a meat eater. He is a meat and potatoes kinda guy. He will almost always prefer a meat dish on the menu when we go out and when I ask him what he wants for dinner it is one meat dish or the other.

I could live and have lived years without red meat. I prefer fish and all the veggies you could possible fit on a plate. I will eat them raw or cooked. I will almost always prefer a veggie dish over any other type.

Fast forward to today. I learned something about him and his love for meat. Here in Mazatlán the meat is sensational. Whether it is stewed, grilled (marinated to perfection) roasted, or vertical rotisserie cooked (called ‘Trompo’ here) the meat is always incredibly flavorful and cooked perfectly no matter how you like it, it will be perfect. This is the very reason why my husband loves meat. I cannot believe how much meat I am eating in the country because of the sheer intense pleasure it provides. The meat is a cultural foundation here. The methods of which it is cooked has tradition and history in every bite. Meat here is not just meat. It is a way of life and lends to a level of appreciation of life today as well as life hundreds of years before.
